BAKING OBSESSION - BEE STING CUPCAKES


Hi guys ^^
I have never posted too much about food or cooking or such over here but since I turned into crazy baking lady during this quarantine time I thought I could share some of the really successful recipes ^^
All the recipes I try atm are from a little book my sister gave me as a Christmas present some years ago and I am baking my way through it from cover to cover.
Todays recipe is from the B section: Bee Sting Cake - who ever called this cake this way and why ;)
Simply everyone who tasted them was head over heels so I just couldn´t keep the recipe from you ^^


The recipe makes 12 Muffins, if you want to know anything about the nutritional facts, let me know but I don´t want to spoil the pleasure with calories or anything ^^


Ingredients:

Topping:
  • 50g Butter
  • 100g Sugar
  • 75g Whipping Cream
  • 100g Rolled Oats
Dough:
  • 125g Butter/Margarine
  • 175g Flour
  • 2 tsp Baking Powder
  • 75g Sugar
  • 1 Vanilla Sugar
  • 1/2 tsp Vanilla Extract
  • 3 Eggs
Cream Filling:
  • 375ml Milk (1,5% fat)
  • 1 Dr. Oetker Original Pudding Pulver Sahne Geschmack (Custard Powder-Cream flavour)

  • 50g Sugar
  • 100g Butter


Directions:

For the Topping: 
  1. Combine butter, sugar and cream in a pot and bring to a boil. 
  2. Add the oats and boil whilst stirring. 
  3. Set aside and let cool.
Preheat oven 180°C

For the Dough: 
  1. Melt butter or margarine and leave to cool down
  2. Mix flour, baking powder, sugar and vanilla sugar in a bowl.
  3. Add extract and melted butter and mix until all ingredients are nicely combined. Make sure all the ingredients are removed and combined from the sides of the bowl.
  4. Fill and evenly divide the dough into your 12 Muffin - Muffin Tin .
  5. Now carefully add the prepared topping onto each Muffin.
Off they go into the preheated oven for 25-30 minutes.

Once they´re done leave them to cool for about 10 minutes inside the tin and carefully remove them to full cool down after that.

For the Filling:
  1. Combine milk, sugar and the Dr. Oetker (Gala) Custard Powder Cream flavour like the packaging says but with the measurements from the ingredients list. 
  2. Once done remove the pot from the heat and stir in the butter.
  3. Add some clingfilm on the top of your cream to prevent that it can build a skim of the liquid.
  4. Leave it to cool down completely
Cut the Muffins horizontally - the bottoms should be a bit bigger that the tops...I cut them right there where the dough baked out of the tin...does that make any sense... ;)

Now apply the cream on the bottom half of the Muffin. You can just use a spoon or like me add it with a lovely piping bag ;) 
Now you only have to add the top half on top and your done ^^




It´s such a easy recipe, need a bit more time maybe, but I´m sure that it´ll be quicker once you get the hang of it and some routine ^^

I love them and simply everybody who tried it literally gave it 20 out of 10 points ;) really I asked them ^^
And they are aaaamazig and eye catching for parties or other occasion when you want to bring something home made!
